UK countries

Hi! I didn't quite understand what did you mean by recognised and non-recognised countries. Could you please explain this? And what's the difference between Bayern (officially a Land, which is German for country) or País Vasco (also an official name;país is Castilian for country as well) except for the fact that these regions are not English-speaking?
