A cutting horse is a stock horse trained for the purpose of separating a single cow from a herd of cattle, and preventing it from returning to the herd. Cutting horse prospects are chosen for their "cow sense", or innate ability to read a cow and know which direction it will move. Quarter horses are typically the breed of choice to train as cutting horses because of their sprinting speed, agility, strength, endurance and gentle disposition.
