A medley dish invented in Mumbai. It is cooked and served on a hot metal plate that is nested in a wooden charger. The dish is inspired by the Japanese Teppanyaki, in which vegetables and meat are cooked on a very hot metal griddle, to keep the inside soft and moist, and make the outside crunchy.[1]
History
It was invented by Firoz Erani in Mumbai in 1963, and his restaurant near Excelsior cinema was called 'Sizzler'.[2] In 1967, his son Shahrookh Erani opened 'Touche’ on Warden Road, but in 1971, he moved to Pune, and started ‘The Place: Touche', a restaurant that is still popular today.[3] In 1975, Vazir Rizvi, a friend and business partner of Firoz Erani, started his own restaurant called 'Kobe Sizzlers' in Mumbai.[4]
