On the island of Antigua these boxfish are referred to as 'shellfish' and they are an eatabale delicacy. They are prepared by slicing the underbelly of the fish and scooping out the guts. Then the belly is stuffed with stuffing (like stove top stuffing, the same way you would stuff a turkey) and spices and butter. The most popular method of cooking it is on the grill but it can also be baked. When it is finished, you tap the hard outer shell & peel it away (the same way you would peel a hard boiled egg), leaving just the tender fish and the stuffing. The fish meat is tender and has a texture like a mix between chicken and fish. The dish is called 'Stuffed Shellfish'.[[User:Jackster69|Jackster69]] ([[User talk:Jackster69|talk]]) 15:32, 18 September 2009 (UTC) |
