This page seemed to think that the Last Chance Saloon exists only in SF shows! I've tracked down a little historical background, but not filled in any of the details. 	I'm pretty certain this phrase has a history beyond SF. Off the top of my head, I can think of a bluetones album called 'return to the last chance saloon', and a lot of newspaper articles using the term.
