Eggsquis breakfast & lunch is a midscale chain of restaurants in Quebec and Ontario, Canada. As the name may suggest it specializes in egg dishes, from bacon and eggs to omelettes.[1][2] As of 2018, there are 39 franchise locations across Canada, primarily in Quebec.

History

The first Eggsquis restaurant was opened by Elias Stergiou in Sherbrooke, Quebec, in 1995.[3] By 2008 there were 32 Eggsquis restaurants in Quebec.[4]

Owners of individual Eggsquis restaurants are allowed by their franchise agreement to add menu items depending on the skill of their chef. In 2010 the owners of the restaurant chain Chez Cora took Eggsquis to court, claiming that some of the dishes at its Mascouche location had been copied from Cora's, including the names of the dishes.[5][6]
