Pallubasa is the traditional food come from Makassar, South Sulawesi. Like Coto Mangkasara (Coto Makassar), also made from offal (contents in the stomach) cattle or buffalo. Cooking process is same with Coto Makassar, the offal boiled in a long time. After its boiled, the offal added with its meat, then slice them, next placed / served in a bowl.
What distinguishes with Coto Makassar is its seasoning which specially formulated. And then Coto Makassar are eaten with ketupat, while Pallubasa are eaten with steamed rice.
