Cooking process is same with Coto Makassar, the offal boiled in a long time. After its boiled, the offal added with its meat, then slice them, next placed / served in a bowl.

What distinguishes with Coto Makassar is its seasoning which specially formulated. And then Coto Makassar are eaten with ketupat, while Pallubasa dimakan bersama nasi putih.
