Chongqing, referred to as "Yu(渝)", another name "mountain city". Located in southwest China, it is one of the four municipalities directly under the Central Government of China.

Chongqing has 26 districts, 8 counties and 4 autonomous counties. The total area is 82,400 square kilometers, and the permanent population is 32.1334 million (data by the end of 2022).

Food

Chongqing is located on the edge of Sichuan Basin, but the terrain is mostly mountainous, so moisture is easy to gather. Chongqing's diet is based on spicy food, which is designed to help drain moisture from the body.

Hot pot

Hot pot is one of the most representative foods in Chongqing.

It originated in the late Ming and early Qing dynasties of China, and it began as a catering for ship workers and slimers at the docks along the river. But with the development of society, hot pot has now become an indispensable diet for Chongqing people.

Chongqing hot pot can be cooked in any food, no limit. And in the '9 grids-traditional chongqing hot pot'(九宫格老火锅), a lattice made of stainless steel is usually put into the hot pot. The function of grid is the planning area, can be everyone with different grid, or can be different vegetables in different grid. But the grid doesn't have to be nine, it can be replaced.
