They opened in 1997, and produce 20,000 barrels of beer annually. Dogfish Head Beers are geared towards the Hop Head. Or a beer drinker that enjoys highly bitter beer with a lot of hops. Their signature products are their line of India Pale Ales. They offer three variety of IPA, the 60 minute, 90 minute, and 120 minute which refer to the amount of time the hops are allowed to steep during the brewing process. The longer the hops steep, the more bitter the IPA.
