Coltsfoot Rock is a confectionery product created from Coltsfoot extract by the UK confectioners Stockley's Sweets, based in Oswaldtwistle, Lancashire, England. As a product, Coltsfoot Rock is a hardened stick of brittle rock candy which is flavoured with Coltsfoot, a plant that has hoof-shaped leaves.

It is a recognised product of importance with regional heritage, along the lines of Dundee Cake, Kendal Mint Cake and similar regional creations and has garnered such acknowledgment from the UK Regional Tourism Board, Lancashire Tourism Council and culinary organisations such as Gourmet Britain.

The recipe is secret to Stockley's Sweets and as the only manufacturer of Coltsfoot Rock all products that are labelled as Coltsfoot Rock have originated from Stockley's traditional Sweet Factory.

The history and popularity of the confectionery comes from its medicinal benefits; originally the leaves of the Coltsfoot plant were dried then smoked and is reported to have relieved asthma while its juices soothed coughs.[citation needed]
