Jacob Sahayakumar Aruni (born 4th June 1974 in Uthamapalayam ([Tamil Nadu]) is an Indian Celebrity Chef who is well known for his authentic South Indian [cuisines]. Chef Jacob is a "visiting chef" at several leading star hotels and "Consultant Chef" at some of the finest restaurants in India and abroad.[1].A dedicated food historian, spice collector and promoter of South Indian cooking[2].
Early life
Born in a family of doctors ,he was inspired by his mother Mrs.Vimala Aruni who is a good home cook more than being Principal of a college , He started to cook at the age of 14 and soon inherited the tangible taste of his mother. His passion for cooking made him to join Catering degree after his B.Sc., in Physics from American College ,Madurai[3].
Career
He worked in various catering schools as faculty and went to take up his advanced degree in catering Technology. Later he took up a job as Head of the Department of Catering and soon elevated as Principal of a catering college in Tamil Nadu,India. Jacob is currently Director of the Catering Department at the Sankara College of Science and Commerce, Coimbatore. He continues his intensive research on ancient cuisines of Tamil nadu and is the author of several books and articles[4] [5]on the same. He also hosts a series of popular cookery shows on television SUN TV[6],CNN IBN[7].
Achievements
Chef Jacob created a new Guinness World Record for the longest barbeque marathon Individually[8] . He barbequed for 24 hours and five minutes cooking a total of 485 dishes(including 150 non-vegetarian ) and achieved the feat at Radisson Temple Bay's ,Chennai ,India on the 14-15 March 2010.[9][10]
His other accolades include a felicitation from the former President Dr.A.P.J.Abdul Kalam for his extensive research on ancient cuisines of South India. He cooked Kongunadu food and serve dignitaries at a week-long official dinner at Rashtrapathi Bhavan.New Delhi[11].
The Indian Federation of Culinary Associations (IFCA) has acknowledged the efforts of 35-year old Chef Jacob Sahaya Kumar Aruni, awarding him the Best Young Chef Instructor of the year 2005-2007[12][13].
He is involved in a famous cookery weekly show on Sun TV "Aaha enna rusi" (Wow! What taste!!)[14].[15]

Research in to ancient Indian cuisines
He had passion for ancient Tamil Cuisine(SANGA KALA UNAVU)[17]- a research on the food habits of people who lived between the 3rd and 16th century A.D. helped by his team, historians and 12 literary works, decoded the references found in ancient scriptures and compiled the work ,Nanjil Nadu cuisine. Nanjilnadu cuisine is the legacy of a community called the 'Nadars' in South Tamilnadu. They are the authentic South Indian cuisines people love through out the world. He is well versed with the history of every South Indian cuisine dating back to ancient times.
His repertoire of dishes today stretches from the second century BC to the early colonial period and has highlights of the famous troika of dynasties that defined Thamizhagam - Pandya, Chola and Chera.
An inscription from 348 BC mentioned a barrel of biryani sent by the Chola king to his Pandya counterpart, while the latter corresponded by sending the pinattu,or the fruit of the palm.[18] [19]
An interesting observation he made during his research in the ancient texts was the food, unlike cultural dance and song performances that the kings watched, was a personal indulgence, and one in which every king took personal interest.[20] A text called Porunar Aatrupadai mentioned 82 cooks being employed at the royal household at a time, and not repeated for a month as they would have exhausted themselves with the effort. Oon Soru or mutton rice was mentioned as an early avatar of the biryani.[21]
Started researching the nuances of ethnic South Indian food at the age of 24,[22]he began a quest into the forgotten flavours of South India. His aim was to make people remember the forgotten tastes and showcase the culinary strengths of South Indians.[23][24]
