Sapsago is a Swiss herb cheese. It is green in color from the herbs, quite strong, dry and hard and is mixed with butter. The German name is Ziger. Ankeziger is Ziger mixed with butter. Schabziger is Ziger that can be shaved and mixed in with other ingredients such as butter, cream cheese, etc.
