Toddy

Toddy is the sugary sap drained from the pods of the coconut palm tree. Toddy is drained and the pods are recut once or twice a day. The sap can then be boiled and refined into sugar. Coconut plantations are capable of producing the same amount of sugar per acre as a sugar cane plantation. However, draining the pods for thier sap prevents the growth of coconuts. The toddy is often fermented into palm wine which is often generically called toddy itself.
