Romesco is a sauce, originating in Spain, that is typically made from garlic, almonds, olive oil and a mixture of peppers and/or chillis. Other common ingredients include tomatoes, red wine vingear and onion. To make it, begin by roasting and/or frying the desired ingredients before pureeing them all together, and seasoning. It is remarkably versatile, and can be used as a pasta sauce, a spread, a dip, or on the side of a wide variety of meats and/or fish.
