Ropa vieja

Ropa vieja (Template:Lang-en) is one of the national dishes of Cuba, consisting of stewed beef with vegetables. It originates from a Sephardic dish from the Middle Ages. Cooking is not allowed on Shabbat so Sephardim would slow cook a hearty stew the night before.[1] [2]
