Sajji (Balochi and Urdu: سجی) is a dish originated in the tribes of Marri and Bugti of Balochistan province of Pakistan. Triditionaly it is made of whole lamb but now chicken is also used, in skewers (fat and meat intact), marinated only in salt, sometimes covered with green papaya paste,, then roasted over coals. Sajji is considered done when it is at the 'rare' stage. It is served with a special bread "Kaak",or "roti", which is baked in an oven, wrapped around a stone "tandoor". Sajji is favourite dish of Baloch people and is available in all regions of Pakistan. Regional varieties are found with subtle differences in flavouring notably in the urban centres of Karachi, Islamabad or Lahore, uses chicken instead of lamb and in Punjab it is served with rice insted of triditional kaak bread or roti, and is roasted until it is medium or well-done.
