Lahori cuisine (Template:Lang-pa, Template:Lang-ur) refers to the food and cuisine of the city of Lahore in Punjab, Pakistan. It is a part of regional Punjabi cuisine. Lahore is a city with an extremely rich food culture. People from Lahore are famous all over the country for their love for food. The city offers a vast variety of options when it comes to gastronomy. In recent times, the style of food has achieved popularity in a number of different countries, because of its palatable and milder taste, mainly through the Pakistani diaspora.[1]
Historical influences
The arrival of Islam within South Asia influenced the local cuisine to a great degree as Muslims are forbidden to eat pork or consume alcohol along with the other enforced Islamic dietary laws[2] [3]. Pakistanis focus on other areas of food such as beef, lamb, chicken, fish, lentils and vegetables as well as traditional fruit and dairy[4] [5]. The influence of Central Asian, North Indian and Middle Eastern cuisine in Pakistani food is ubiquitous. Much of the food of Lahore is influenced by the local Punjabi and Mughlai cuisine. Along with traditional local food, Chinese, western and foreign food are popular throughout the city and have often been fused with local recipes to create refined tastes; Pakistani Chinese food is largely available[6] [7].

- Gosht karahi (chicken or mutton cooked with a spicy tomato-based gravy in a concave-shaped cooking vessel that resembles a wok) is a speciality of Lahore.

- Murgh Cholay/Channay (chicken cooked with chickpeas)[10]
- Murgh Musallam (chicken cooked with rice and dry fruits stuffed inside)
- Seekh kababs (minced meat rolls)

- Dahi bhallay (appetizers dipped in yoghurt)

- Chicken tikka (barbecue-style fried chicken pieces)

Famous Foods
Lahori food is popular around the globe. The city is replete with the multifarious types of dishes that one can hardly witness anywhere in the world.[14]
In past, Lahore had remained the governing place of Mughals, Turks, and various other Muslims rulers. The food of Lahore exhibits its past. Lahori food is an amazing amalgamation of different cultures[15]. Besides, Lahoris are born foodies and like to live an epicurean lifestyle; this is why Lahori food is something we can not ignore[16].
Lahore lays claim to a large number of regional specialties that reflect the city's ethnic and working-class roots. Included among these are its nationally renowned breakfasts. Siri paaye or payawith piping hot roghni naan with chilled sweet lassi is the famous breakfast of Lahore. Another breakfast widely served breakfast is Halwa puri and naan channay found in all corners of Lahore.
Taka tak is famous dish of Lakshmi chowk which includes stir-fried meat containing brain, kidney prepared with loads of vegetables and taka tak'd on a large pan[17]. Lakshmi chowk is also famous for it's desi murgh karahi. Desi Murgh Chicken Karahi is cooked with the fresh Desi chicken that would be slain in front of you and would be cooked with a desi Ghee (Butter). Besides, the chicken Karahi is served with the yogurt and a plate of salad[18].
Another famous dish is Tawa Piece chicken. Tawwa piece is marinated and delicious chicken cooked on a pan[19]. It is a widely-known dish in Lahore. The chicken is cooked in a heated oil with the addition of onions, tomatoes, green chillis and ginger juice. The spicy Tawwa Chicken is the traditional Lahori food[20].
Basen fried fish from Mozang is a dish served in winters in which fish is drenched into the paste, which is made with the gram flour and several other spices and then it is fried in oil[21]. The taste of the fish is out the world, it is served with the Allo Bukhara chutney (Prunes sauce)[22].
Other famous dishes include kebab, tikka and chargha from Heera Chargha, Nihari from Waris Nihari House, Hareesa from Amritsari Hareesa on Nisbat Road, Dumba Karahi from Ilyas Dumba Karrahi, Truck Adda, Tandoori Shawarma from T2 Tandoors, Dahi Bhallay from Nafees Dahi Bhallay in Model Town, Haleem from Kozi Haleem and Sajji from Krados[23].
Famous desserts include Falooda, Paitha and Gajar Ka Halwa[24] from Butt Sweets, ice cream cone from Alamgir Waffles, Jalebi from Grato Jalebi, Khatai from Khalifa Bakers, Fruit Chaat from Anarkali, Gulab Jamun from sharaqpuri gulab jamun[25] and Kunafah from Nisa Sultan.
Moreover, there are also a large number of restaurants, cafes and bistros across the city serving Chinese, Italian, Continental and Mediterranean cuisines. Fast food joints serving burgers, pizza, sandwiches and shawarmas are also found in all corners of the city[26]. Gawalmandi Food Street and Fort Road Food Street near Badshahi Mosque are famous food streets for enjoying traditional Lahori cuisine and street foods. M. M. Alam road is neighborho[27]od famous for upscale cafes and restaurants serving international cuisines. The neighborhood also has many rooftop restaurants. Johar Town is also a famous food hub with a large number of restaurants[28].
