醇脱氢酶是一种锌蛋白,能作用于伯醇、仲醇和半缩醛等多种受質。这种酶氧化甲醇的能力比氧化乙醇的能力弱,可以利用這個特性解除甲醇中毒。动物细胞中的醇脱氢酶还能氧化环状化合物的二级羟基,但酵母的醇脱氢则不具有这种功能。
