醇脫氫酶(英語:Alcohol dehydrogenase,縮寫ADH, EC 1.1.1.1页面存档备份,存于互联网档案馆)),是一种以NAD+NADP+受体、作用于供体CH-OH基团上的氧化还原酶。这种催化以下两种酶促反应

伯醇(一級醇) + NAD+ + NADH + H+
仲醇(二級醇) + NAD+ + NADH + H+

醇脱氢酶是一种锌蛋白,能作用于伯醇、仲醇和半缩醛等多种受質。这种酶氧化甲醇的能力比氧化乙醇的能力弱,可以利用這個特性解除甲醇中毒动物细胞中的醇脱氢酶还能氧化环状化合物二级羟基,但酵母的醇脱氢则不具有这种功能。
