I think your structure so far looks great! Dietary supplements are a super relevant topic and something that I find very interesting myself. If you're looking for more information, do some research on Dr. Paul Offit. He's written a lot of books on supplements and other alternative medicine practices, and has a lot to say about their place in the medical world.
It might be easy to get caught up in specifics, in terms of which supplements you want to include as a part of your article, so I would maybe suggest to focus mostly on the theory (which you've already included in your outline).
